Here you'll find recipe ideas that our babies just love!  Bon appétit!

Pea Bites (My own creation, although I'm sure there's something similar out there!)

These bites are a new personal favourite for little K!  They're great for snacks, or to add to lunch or dinner.  They're also packed with protein.  Be warned, they don't smell great, but according to K, to taste great!

What you will need:
- 1 can of chick peas
- 1 can of peas
- 1 tomato
- 1 egg
- If necessary: a bit of bread crumbs

Instructions:

- Preheat your oven at 350 degrees.
- In a bowl, combine your strained and rinsed peas and chick peas.
- With a hand mixer, puree your peas and chick peas.
- Add a tomato and puree that with the chick peas and peas.
- Add your egg and some bread crumbs if needed (I sprinkled in a bit).
- In a Ziploc bag, place some of your mixture, and cut the corner of the bag.
- Make small bite-sized blobs (yes, blobs) on a greased cookie-sheet OR a sheet covered in parchment paper (I love that stuff!).
- Bake your bites for 15 minutes, or until they are slightly browned and cooked all the way through.



This recipe made an overwhelming number of bites, so I froze some for later.

Home made Chicken Fingers

These are one of K's personal favourites.  Actually, my husband loves them too!  We usually have them with sweet potato fries and carrots fries, all very simple to bake in the oven!

Here's what you need:

1/4-1/2 cup of flour (depending on how many chicken fingers you're making)
1 egg
breads crumbs, cornflakes or crushed crackers (we personally enjoy the seasoned bread crumbs)
1-2 boneless chicken breast (1 breast feeds our family of 3)

- Preheat oven at 350 degrees.
- Slice your chicken breast into thin strips.
- Have three bowls ready (the first with flour, the second with an egg, and the third with your choice of bread crumbs, cornflakes or crushed crackers)
- Dip each chicken strip in the flour, then the egg and then the breading
- On a cookie sheet with parchment paper (if you have any - it makes the fingers crispier), bake your chicken fingers for approx. 20 minutes or until they are fully cooked.

I sometimes makes a pesto mayo to dip them in for the adults.  It's a huge hit at parties!

Quinoa Patties (can also be made with couscous)

* All measurements are approximate.  I rarely measure! *

1 cup of quinoa (or couscous)
1/2 cup of Spinach (frozen or fresh)
1/2 cup of Carrots (grated)
1 egg
1/4 - 1/2 cup of Bread crumbs
Feta (optional - We like to add it so adults can really enjoy these patties as well!)

Combine all ingredients in one bowl.
Make patties and bake in the oven OR in a panini press.

** Any veggies, or even tuna/salmon can be added to these patties.

They're a huge hit with our little guy!  Bon appétit!

Tuna Bites
I don't measure for most recipes, but here are some approximate measurements for the Tuna Bites recipe:

Ingredients:
- 1 can of tuna
- 1/4 cup of bread crumbs
- 1 large carrot (grated)
- egg

Mix all of the ingredients listed above.  Roll into small balls and place on cooking sheet with parchment paper.  

Bake your Tuna Bites for approximately 15 minutes and let cool.  

That's it!  Enjoy!  I know my little guy did!  Please ignore the cloth on his head.  My husband thinks it's funny!

Sweet Potato Num Nums

Ingredients:
1 medium sweet potato
3 tbsp. vegetable oil
3 tbsp. water
1 tbsp. brown sugar
1 tsp. cinnamon
1 c. baby cereal ( (I use ground oats)
1/2 c. flour

1. Preheat oven to 350 degrees.
2. Mix mashed sweet potatoes, oil and water in a medium size bowl or measuring cup.  (To make my mashed sweet potatoes, I poke holes into it and microwave for a few minutes.  You can also boil chunks until tender)
3. Stir in brown sugar and cinnamon.  If your baby is sensitive to cinnamon, you can omit it.
4. Stir in remaining dry ingredients.  The dough should begin pulling away from the side of your mixing bowl.  Add more cereal or flour if your dough seems too wet; however, it should be a little sticky.
5. Roll small balls of dough onto an ungreased cookie sheet and flatten with a fork.  Bake for 15 min.  Bake longer if you would like a crispier result or shorten the bake time if you would rather a softer, chewier result.

These are great fresh or I put left over in the freezer for easy to grab snack.  just let them thaw for about 15 min on the counter before serving.

Pea Fritters

Ingredients:
2 cups peas
3 eggs
2 green onions, roughly chopped
1 ½ cup plain flour
1 tsp baking powder
1 handful of fresh herbs (I used basil, parsley and mint)
1 lemon, zested
Vegetable oil, for frying

In the bowl of a food processor place the peas (hold back 1 cup of peas to fold through later) eggs, spring onions, flour, baking powder, fresh herbs and lemon zest.  Pulse until combined.  Fold through remaining peas.  Heat a lightly greased fry pan to medium- high heat, ladle tablespoon sized dollops of the batter onto pan and cook for a couple of minutes, flip and cook the other side until lovely and golden.

**I have substituted the peas in this recipes for lots of other veggies including broccoli, zucchini and more**
